I like to serve it for dinner with vegetables.
Ingredients:
- 1 cup chickpea flour
- 1 cup water
- 4 tablespoons extra virgin olive oil
- salt
- a little black cumin
Instructions:
Pour the water into a bowl. Slowly whisk in the chickpea flour and 2 tablespoons good quality olive oil until smooth (you can also use blender which will help you to eliminate lumps). Let stand at room temperature for 2 hours.
Preheat the oven to 170°C.
Heat a skillet in the oven for 10 minutes.
Stir in the salt and the remaining olive oil.
Put the batter to the skillet (it should be thin).
Sprinkle with the black cumin on the top.
Bake for 15 to 20 minutes, until crisp around the edges. Slide the farinata onto a board; cut into wedges. Sprinkle with pepper; serve.
