It's very good for Sunday breakfast.
Ingrediens:
- 2 hard-boiled eggs, cooled and peeled
- 1/5 cup dried cranberries, chopped plus a dozen more to salad
- 1 Tbsp yoghurt
- dill to garnish
- 1 cup mixed salad greens
- pinch of salt and ground pepper
- olive oil
Instructions:
Pour cranberries with hot water. After 5 minutes drain off any water.
Slice the eggs in half and carefully scoop out the cooked yokes. Mix together the yolks, dried cranberries, yoghurt. Add salt and ground pepper to taste and blend until smooth.
Spoon the mixture back into the solid egg white cups with a teaspoon.
Sprinkle with dill.
Serve with your favourite mixed salad greens, sprinkled with the remaining dried cranberries. Pour with olive oil.
