Ingredients:
- 1 baked shortcrust pastry
- 200g mushrooms
- 2 bell peppers (red and green)
- 2 onions
- 2 tomatoes
- 3 tbsp hot ketchup
- 1 tsp oregano
- 3 tbsp olive oil
- 2 eggs
- 150g sour cream
- 2 Mozzarellas, grated
- salt and pepper
Instructions:
Vegetable filling: slice mushrooms, peppers, onions and tomatoes. Heat the olive oil in a frying pan. Add onion and mushrooms and cook about 7 minutes . Add peppers and cook until pepper becomes soft. Add tomatoes and ketchup. Cook until you get thick sauce. Add salt, pepper and oregano. Let it cool.
Prepare cheese filling: Mix together eggs, sour cream, Mozzarellas, salt and pepper.
Preheat the oven to 180C.
On the baked shortcrust pastry put the vegetable filling. Then put cheese filling.Bake your pizza for 20 minutes or until cheese filling is golden brown. Remove it from the oven, and carefully lift it out of the pan onto a rack.
Serve with your favourite greens mix sprinkled with youthurt and dill.
