Lentil Paste

This paste can be modified and used in many ways! You can serve it for breakfast with vegetables and bread or it's really great idea to use it as an afternoon snack.


Ingredients:


  • 130g red lentils
  • 1 onion, chopped
  • 50g pumpkin seeds + few for garnish
  • 1 tsp turmeric
  • 1/3 tsp chili pepper flakes
  • salt
  • 10 dried tomatoes from olive oil
  • 7 tbsp olive oil (you can use the one from tomatoes)


Instructions:

Heat 2 tablespoons of the olive oil. Add chopped onions and cook for 3 minutes. Rinse lentils under tap water and add them to onion. Add water, turmeric, salt, chili flakes and let it cook until lentils are tender. Allow to cool slightly.
Blend pumpkin seeds, then add dried tomatoes, lentils, remaining olive oil. Blend all together until you reach the desired paste.
Garnish with pumpkin seeds.

Serve with vegetables, bread or crispbread.

Tart with Fruit and White Chocolate

Surprise your guests with this beautiful and tasty tart.
It looks amazing and tastes really great!


Shortbread Tart Pastry:

  • 130 g butter, cold
  • pinch of salt
  • 35 ml of milk, cold
  • 175 g wheat flour
  • 1/2 tsp of powdered sugar
  • 1 egg yolk


Sift the flour, add the butter and chop it all together quickly with a knife until the dough will look like a crumble. Add the egg yolk, sugar, salt, milk and quickly knead (you can also mix in the blender). Form a ball from the dough, wrap it with plastic foil, chill in the refrigerator for 30 - 60 minutes.

The baking pan (with removable bottom) with dimensions of 29 x 20 cm spread with butter and sprinkle with flour. Chilled dough roll out to a thickness of 3 mm and put into the pan, prick with a fork. 

Preheat oven to 220 °C. Lower the oven temperature to 200 °C and put the dough and bake for 25 minutes. 


White chocolate cream:

  • 250g mascarpone cheese, chilled
  • 125 ml whipping cream 36%, chilled
  • 100 g white chocolate melted in a water bath, chilled but still liquid


Mix whipping cream and mascarpone cheese until you get thick cream. Add melted chocolate and mix with a spatula to get a smooth cream.


Additionally you will need:

  • 4 tablespoons blueberry jam
  • 300 ml whipping cream 36%, chilled
  • 2 tsp caster sugar
  • 200g blueberries 
  • several large strawberries
  • 50g white chocolate melted in a water bath


Spread the jam on the baked and chilled shortbread. Put white chocolate cream on the jam. Cool in refrigerator for at least 4 hours.

Whip the whipping cream with powdered sugar (add at the end of whipping). Put on white chocolate layer, sprinkle the top with fruits and melted chocolate.

Store in a refrigerator.

Bean Bread

It's a very good idea to use this bread for breakfast, because it contains both protein and carbohydrates. It will also be good for dinner with vegetables.
Beans contain large amounts of protein, calcium, phosphorus and potassium, therefore it must be a part of your diet.


Ingredients:

  • 1 cup cooked and cooled white beans 
  • 150 g cooked and cooled millet
  • 1/2 cup milk
  • 1 small onion, chopped
  • 1 tbsp ground flaxseed
  • 2 tbsp olive oil
  • 1 heaped teaspoon of your favorite herbs (maybe thyme, oregano, herbs de Provence, marjoram, etc.)
  • black cumin
  • salt and pepper


Instructions:

Combine all ingredients and blend until you can form a homogeneous dough.
Add herbs and spices and mix thoroughly.
Put the dough into a flat mold lined with baking paper.
Sprinkle with black cumin on top.
Bake for 35 minutes in the oven preheated to 180 C.

Apple Cake - Fit Version

This cake is low in calories, sugar and extra fat, and most importantly - it tastes really great!
You can make 8 pieces of this cake. Each portion is about 150 calories.



Ingredients:

  • 6 medium peeled apples, diced  
  • 150 g millet groats
  • 5 eggs
  • vanilla extract
  • cinnamon
  • 3 tbsp maple syrup
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1/2 tsp spirulina


Instructions:

Rinse millet in running water and cook until tender according to the instructions on the package. Leave it to cool.
Put peeled and sliced apples into the pot with a little water and cook over low heat until soft. Blend them until smooth and cook for few minutes to evaporate excess water. Add spirulina powder to make your apples green.
Blend cooked millet groats, eggs, lemon zest, lemon juice and vanilla extract until smooth. Add maple syrup and mix. 
Transfer the dough into baking pan and put in the oven preheated to 180 degrees. Bake for about 20 minutes until the top of the cake is browned. 
Remove the cake from the oven and pour on top the apples. Put again into the oven and bake additional 20 minutes. Leave it to cool, then refrigerate the cake to be tightened.
Before serving sprinkle with cinnamon.

Pizza Tart

Serve this beautiful tart either as a starter or as a light main course accompanied by a green salad.



Ingredients:

  • 1 baked shortcrust pastry
  • 200g mushrooms 
  • bell peppers (red and green)
  • 2 onions
  • 2 tomatoes
  • 3 tbsp hot ketchup
  • 1 tsp oregano
  • 3 tbsp olive oil
  • 2 eggs
  • 150g sour cream
  • 2 Mozzarellas, grated
  • salt and pepper


Instructions:

Vegetable filling: slice mushrooms, peppers, onions and tomatoes. Heat the olive oil in a frying pan. Add onion and mushrooms and cook about 7 minutes . Add peppers and cook until pepper becomes soft. Add tomatoes and ketchup. Cook until you get thick sauce. Add salt, pepper and oregano. Let it cool.
Prepare cheese filling: Mix together eggs, sour cream, Mozzarellas, salt and pepper.
Preheat the oven to 180C.
On the baked shortcrust pastry put the vegetable filling. Then put cheese filling.
Bake your pizza for 20 minutes or until cheese filling is golden brown. Remove it from the oven, and carefully lift it out of the pan onto a rack. 

Serve with your favourite greens mix sprinkled with youthurt and dill.

Puff Pastry with Mozzarella and Tomato

If you are looking for a last minute appetizer, I've got the perfect one. These 4-ingredients puff pastry pizzas are quick to make (10 minutes to prep, 15 minutes to bake) and they are super delicious!

Ingredients:

  • 1 package puff pastry dough
  • 1 big tomatoe, sliced
  • 1 Mozzarella, sliced
  • fresh chopped basil
  • salt and pepper


Instructions:

Using a knife or pizza cutter, cut puff pastry into rectangles (I made 10).
Put thin slices of tomato on it. Then add Mozzarella slices.
Bake in the oven at 180 degrees for 17-20 minutes.
Sprinkle with fresh chopped basil, salt and pepper before serving.

Salad with Beetroot and Millet Groats Chops

These vegan chops are so much of a joy to watch that it’s a shame to actually put them in your mouth. But I promise you won’t be disappointed once you do! Try them with the mix of your favourite greens and cheese. Delicious supper!

Ingredients:


  • 50g millet groats
  • 1 cup water
  • 1 medium cooked beetroot
  • 1 tsp ground flaxseed 
  • 3 tsp hot water
  • 2 tbsp meal
  • 1 tbsp coconut oil
  • 2 handful of your favourite greens mix
  • 4 small balls of Mozzarella cheese
  • 2 tsp sunflower seeds
  • pinch of salt and pepper
  • olive oil


Instructions:
Cook the millet. Rinse it well under running water before boiling (otherwise the millet will have a bitter taste). Boil in lightly salted water (1 cup of water for 1/2 cup of millet) on a low fire for 15 minutes, until the water is gone. Let it chill for a bit.
Pour 3 teaspoons water into 1 teaspoon of grounded flax seed. Mix it well. This mixture will replace egg.
Blend cooked millet groats and beetroot until smooth. 
Add flaxseeds mixture, meal, salt and pepper. Mix well.
Heat the coconut oil in a pan.
Fry the chops by forming them using your teaspoon.
On the plate put greens, chops and Mozzarella. Sprinkle with sunflower seeds and olive oil.

Spelt and Almond Cookies

Quick, easy and whole-grain cookies will be a hit with everyone. 
You can keep this cookies in a big jar even a for month.


Ingredients:


  • 400g spelt flour
  • 250g butter
  • 100g cane sugar 
  • 200g almond flour
  • 20g cinnamon
  • 20g nutmeg
  • 3 tablespoons cocoa powder
  • 2 eggs
  • pinch of salt
  • 2 tablespoons water


Instructions:

Mix all ingredients very well until you get a big ball from the dough.
Roll out the dough to a thickness of 3 mm and cut out circles (you can use glass).
Preheat the oven to 180°C.
Bake the cookies about 12-15 minutes.

Healthy Breakfast - Banana Pancakes

This is very delicious and simple pancake made with eggs and bananas and protein whey. It tastes yummy with fluffy inside and crispy on the outside with awesome vanilla flavor. 




Ingredients:

  • 1 egg
  • 2 bananas, mashed
  • 3/4 cup wholemeal spelled flour
  • 1/2 cup wheat flour
  • 1/2 vanilla protein whey
  • pinch of salt
  • 1 tsp baking powder
  • 1 cup milk
  • 5 tsp coconut oil
  • natural yogurt and maple syrup, to serve


Instructions:

Take a small mixing bowl. Beat egg until frothy.
In a separate bowl, combine all flours, protein whey, salt, baking powder. Mix well.
Add milk and stir.
Mix together the beaten egg. Add mashed bananas to the batter. Combine well.
Heat frying pan over medium heat.
Drizzle coconut oil slightly.
Pour or scoop batter onto hot pan. Cook until pancakes are light golden brown on both sides.
Transfer to serving plate and serve with natural yoghurt and maple syrup.

Crispy Roasted Potatoes with Garlic and Parmesan

If you like french fries, this recipe is just perfect for you. It's healthier and not so fatty as normal french fries. Kids will love it!



Ingredients:
  • 1 kg potatoes, cut into small pieces
  • 100g parmesan cheese, grated
  • 3 tbsp olive oil
  • 1 tbsp chili olive oil
  • 2 cloves garlic, crushed
  • 1 tsp oregano
  • salt and pepper, to taste
  • fresh parsley, to garnish


Instructions:

Preheat oven to 180 C.
In a bowl, mix Parmesan cheese, olive oil, oregano, garlic, salt and pepper.
Add potatoes and stir well to coat them thoroughly with a mixture of cheese.
Transfer to a casserole dish.
Bake 40 minutes. By this time, potatoes will be browned and crispy.
Sprinkle with fresh parsley before serving.

Buckwheat Pâté with Dried Mushrooms

This pâté is really good alternative for evening snack. It also tastes great served with mushroom sauce and gherkin.



Ingredients:


  • 1 cup of dry unroasted buckwheat 
  • 2 eggs 
  • 2 tbsp wild garlic
  • 80g of dried mushrooms
  • 2 Tsp Himalayan salt
  • 2 tbsp millet flakes
  • 4  tbsp of melted butter
  • 1 red onion
  • 1/3 tsp freshly ground pepper
  • 1 bay leaf, allspice 2 balls
  • 1 tsp black cumin 
  • 5 dried plums, cut into slices


Instructions:

Combine dried mushrooms and boiling water in a small bowl and let soak for 30 minutes. Remove mushrooms, finely chop and set aside. 
Cook the buckwheat with bay leaf and allspice until soft. Leave it for 15 minutes to cool.
Finely chop onion
Blend the cooked buckwheat with eggs, melted butter until smooth.
Add mushrooms, onion, spices and millet flakes. Mix thoroughly.
Preheat the oven to 180°C.
Baking mold line with baking paper. Transfer the mixture. Sprinkle with black cumin and garnish with dried plums.
Bake about 40 minutes.
Remove from oven, cool it and put in the refrigerator (preferably overnight).

Chocolate Millet Cake with Banana

Creamy and very chocolate cake with banana.
If you like chocolate, then you must try it!


Ingredients:

  • 1 cup of Millet groats
  • 1 cup almond milk
  • 100 g of dark chocolate (90% cocoa), chopped
  • 2 tbsp raw cacoa powder
  • 1 ripe banana, chopped
  • 1/2 cup of stevia (or sugar)
  • 3 tbsp coconut oil


Instructions:

Rinse and drain 1 cup of millet, then cook it on low heat in 2 cups of water for 15 minutes. Add chocolate and stir. Leave it to cool.
Blend millet with alamond milk until smooth.
Add banana, stevia, cocoa powder and coconut oil. Blend all thoroughly.
Line a baking mold with parchment paper. Transfer the batter into it.
Bake in 180°C for 30 minutes. Cool the cake down.
