Ingredients:
- 130g red lentils
- 1 onion, chopped
- 50g pumpkin seeds + few for garnish
- 1 tsp turmeric
- 1/3 tsp chili pepper flakes
- salt
- 10 dried tomatoes from olive oil
- 7 tbsp olive oil (you can use the one from tomatoes)
Instructions:
Heat 2 tablespoons of the olive oil. Add chopped onions and cook for 3 minutes. Rinse lentils under tap water and add them to onion. Add water, turmeric, salt, chili flakes and let it cook until lentils are tender. Allow to cool slightly.
Blend pumpkin seeds, then add dried tomatoes, lentils, remaining olive oil. Blend all together until you reach the desired paste.
Garnish with pumpkin seeds.
Serve with vegetables, bread or crispbread.
